Spiced Chocolate Cake
December 14, 2008
Tomorrow’s my Birthday and so I’m required, of course, to meet with the family and celebrate. I don’t particularly enjoy celebrating my own birthday, but it’s only one day a year, I guess.
A birthday is nothing without cake. You and I both know that. Cake is the best part of the party. This year, there wont be much of a party, however there will be cake; my own creation: a spicy chocolate bundt cake.
Behold:

Spiced Chocolate Bundt Cake:
1 1/2 c. Granulated Sugar
1 2/3 c. AP Flour
2/3 c. Cocoa Powder
2 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Salt
1/2 c. Butter
1 c. Buttermilk
2 Eggs
1/2 c. Strong coffee, cooled
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Clove
1/4 tsp Ginger
1 tsp Vanilla Extract
Mix all ingredients together and pour into a well greased bundt pan. Bake in a 350 degree oven for 40 minutes. Once done, let it cool in pan for a couple of minutes and then turn out onto a cooling rack.
Lemon Glaze
1/4 c. Butter, melted
1 tbsp Lemon Juice
1 c. Powdered Sugar
Mix it all together and then pour over cooled bundt cake.
Enjoy!
