Pane Di Mais

Sponge:
1 tsp Yeast
2 oz Water
.5 tsp Honey
1 c. Corn Meal Porridge
5.25 oz Bread Flour

1 tsp Salt
5.25 oz Bread Flour

Porridge:
1.5 Tbsp Rosemary, chopped
1 Tbsp Oilve Oil
32 oz Water
.25 tsp Salt
1 c. Polenta

Straight Dough Method

Portion into 2 oz balls. Boule up portions very well. Place on a pan and egg wash. Score the tops with an X and bake until golden brown.
