Here’s what I baked for my friend Q’s birthday today.

Chocolate Chip Cupcakes with a Swiss Meringue Buttercream and Chocolate Sauce

These turned out very moist and not overly sweet, which I was happy about. I don’t think that I particularly like the overly sweet cupcakes that your friends brought in for their birthdays in first grade. Here’s a more sophisticated cupcake for us adults. Ahaha.. I just insinuated that I was adult. What a joke.

Chocolate Chip Cake:

1/2 c Unsalted Butter
1/2 c Granulated Sugar
2 Eggs
1 tsp Vanilla Extract
1/2 c Milk
1 1/4 c Flour
1/2 c Chocolate Chips (semisweet is what I used.)

Cream the butter and sugar as well as the vanilla until it’s light and white and fluffy. Should take about 5 minutes on high speed with a hand mixer. Then add the eggs and the milk, followed closely by the flour. Mix until it’s combined, mix in the chocolate chips (Before you mix them in, toss them with about 1 tbsp of flour.) and then spoon into 12 cupcake papers in a muffin pan. Bake at 350 degrees for about 20-25 minutes or until a toothpick inserted in the center comes out clean.

Swiss Meringue Buttercream:

2 egg whites
3/4 c Granulated Sugar
2 tsp Vanilla Extract
3/4 c Unsalted Butter

Over a pot of simmering water, combine in a heatproof mixing bowl the egg whites and sugar. Beat at medium speed until the sugar is completely dissolved. Take off of the heat and continue to beat until it’s cool and the mixture forms stiff peaks. Next, add the butter, one table spoon at a time until the entire amount is incorporated and it’s smooth and satiny.

I frosted my cupcakes and then drizzled the chocolate over the tops of them to make ’em look that much more yummy. Who knows, I might add a couple of sprinkles later on tonight.
